Bring to a gentle boil and cook until the liquid is mostly absorbed.
6. Add the Chicken Tikka
Arrange the cooked chicken pieces over the rice. Sprinkle fresh coriander and mint on top. Avoid excessive stirring so the rice grains remain whole.
7. Steam the Pulao
Reduce the heat to low and cover the pot tightly. Steam for 15–20 minutes, or until the rice is completely cooked and fluffy.
8. Rest and Fluff
Turn off the heat and let the pulao rest, covered, for 5–10 minutes. Gently fluff the rice with a fork or flat spoon.
9. Garnish and Serve
Garnish with fried onions, fresh coriander, mint, and green chilies. Serve hot with cucumber raita, mint raita, fresh salad, green chutney, and lemon wedges.
Recipe Notes
- Bone-in chicken gives the pulao extra flavor.
- Marinating the chicken for several hours gives better tikka flavor.
- Use good-quality long-grain basmati rice for fluffy results.
- Avoid stirring the rice too much while cooking.
- For a smoky restaurant-style flavor, give the cooked chicken a light charcoal smoke before adding it to the pulao.
- Adjust the chili and tikka masala according to your preferred spice level.
Storage
Store leftover tikka pulao in an airtight container in the refrigerator for 3–4 days. It can also be frozen for 1–2 months.
When reheating, add a small splash of water or chicken stock, cover, and heat until the chicken and rice are steaming hot throughout.
